Open-faced Avocado Caviar Sandwich

Years ago, back in Ukraine, when I was a medical student, on the morning of a test (exam) my mother would always make me a sandwich with caviar, aka "salmon roe".

Even back then before the newest neuro-nutrition science emerged, we both believed in the magical power of caviar on the brain and memory.

Well, honestly, all I wanted is to get a good grade on my test.
And when I did, I believe that it part it was because of my morning caviar sandwich!
From the neuro nutritional standpoint it is well known that red caviar has one of the highest concentrations of brain-building Omega-3


Caviar also is an excellent source of choline, which again, is a great memory booster.


Ingredients you need to make delicious sandwitch
  • 1 Avocado
  • 1 TBS of caviar
  • 1 piece of whole wheat sprouted bread
  • 3 cups of spinach+kale mix (or just spinach). I buy mine from Costco
  • 2 cloves of garlic minced
  • 3 cherry tomatoes
  • 1 TBS of freshly squeezed lemon
  • 1 small cucumber






Caviar is also an excellent source of choline, which is a great memory-booster.

How to make Open-Faced Avocado Caviar Sandwitch:
First: Make avocado spread

1. In a medium skillet saute 3 cups of spinach+kale mix along with the 2 cloves of garlic.
Let it cool

2. In a medium bowl, mash 1 ripe avocado.

3. Add some salt and pepper

4. Squeeze 1 tbsp of fresh lemon juice

5. Add cooked and cooled spinach+kale+garlic mix to the bowl


Toast your sliced bread.
Add a generous layer of avocado spread over the piece of toast.
So so good!
Add your desired toppings:
  • sliced cucumber
  • halved cherry tomatoes
  • generous tablespoon of caviar
So so good!
